The olives are stored in well ventilated box, after defoliated to remove any foreign bodies and carefully washed with a hydropneumatic system. The washing process eliminate all the rest of foreign bodies from olives and it ensures a product hygienically clean.
The clean olives are sent to the crusher to the phase of milling. The mill, of modern conception, is equipped by a hammer and moving blades, in order to minimize the possible increase of temperature during the transformation of the olive paste. This system provides that the polyphenol content remain unchanged in the finished oil.
